Rusty wanted to try making empanadas. We got orange Goya empanada skins, stuffed them with taco meat & Monterrey Jack cheese, then fried them in a pan because we didn’t have enough oil. It didn’t turn out crisp, but still pretty good like a fried enchilada. In the end we spent $16 and two hours to make four empanadas …they are ready at $1.25 each from the carts down the street.
