I’m trying to think what to make today for the Florida Gators v S. Carolina Game Cocks. Although Tio Wally recently reminded me of the Mexican Cock, I suppose poultry would be the better choice. Here’s some old photos of Russ and I cooking some Beer-Can Cornish Hens from back in the day when I was just thinking of starting a food blog.

Seasoned the hens with olive oil, salt, pepper, Adobo seasoning (and probably other stuff we had in the cabinet like garlic powder, cumin, oregano). Then I put a half drunken can of PBR (with the help of Rusty) up the cavities of the hens. I remember one of the guys took a lot of stretching, but I eventually got that beer up its butt. Baked them in the oven at 375 for around 2 & 1/2 hours. The little guys came out real moist and falling to pieces.
