You ever have a ridiculous idea that you thought was so awesome and you weren’t even drunk? I first sauteed some eggplant slices with olive oil, salt, pepper, oregano and balsamic vinegar. Then took some Japanese curry mix with kawaii packaging and dropped it in boiling water with chunks of eggplant and let it simmer for 15 minutes. The eggplant broke down into the liquid, but it was still very thin and watery. I dropped in about 2 tablespoons of flour to thicken it up, but it clumped up immediately –almost becoming mini dumplings. I beat it around until the flour dissolved as much as it could. Threw the eggplant slices on an onion roll and poured on the eggplant curry sauce, with the bread soaking up the eggplant au jus –a sort of vegetarian French Dip Sandwich.

This sandwich was disgusting. I hope you can learn from my failures.

    Hilarious! I was totally prepared for this to be a typically *nom nom nom* post. The fried eggplant looks good, I think it was the crazy sauce that did this sandwich in. Using flour to thicken stuff seems to require really high level food skillz.
