Patel Bros Indian grocery store in Jackson Heights, Queens –I had gotten the tip of the Pillsbury naan from Paul Monty and the 99cent curry packs from Serious Eats. We dug in after a late night. I almost passed out grilling the paneer naan on the stove. Rusty dropped a plate of tator tots. It was in slow-mo.
The next morning I tried my hand at the Pillsbury ready to puff roti. I think I got too lazy to follow the instructions to the tee because none of them really puffed like the picture. I didn’t see why you would need to press it down with a wet cloth so I ignored it. That’s why it caught on fire. Somehow a smiley face and an alien face turned up out of them. It was like seeing the Virgin Mary in my Indian food.

I also ignored the wet cloth. What was that all about?

@Anon …at Patel Brothers Indian supermarket in Jackson Heights. Found out on Serious Eats you can get them in the Jersey Patel Bros too for 99cents. I had actually bought one of these packs for $2.50 in Murray Hill a few days earlier. So great deal! Get some rice from Chinee Takee Outtee and viola!

The wet cloth gives the bread the moisture it needs to puff up. You could also spray water on them for the same effect.
